About Toklas

Toklas is a Mediterranean restaurant focussing on the freshest seasonal ingredients from sustainable suppliers, simply presented and prepared. With a nod to our carbon footprint and healthy eating, the menu veers towards fish and vegetables, with only a few meat dishes. The menu changes weekly to take advantage of the seasonality of ingredients. The restaurant has a bar, a large terrace, and its own excellent bakery and café.

Toklas comes from the founders of Frieze art fair, and attracts many diners and events from the art and culture world. We are the exclusive UK importers of Todoli Citrus, an organic citrus farm in Spain with 480 varieties. 

 

Sous Chef role

This is an opportunity for someone who cares passionately about food, and wants to serve dishes at their freshest and most seasonal. The changing menu gives a great opportunity to participate in menu development and learn new dishes. As senior sous chef, you will play a key role in delivering excellent, consistent food. You will work with the head chef on menu and produce, development, managing kitchen operations, budgets, and the team.

Head chef Yohei Furuhashi worked at the River Café for 9 years, and was then head chef at Dinings and Petersham Nurseries.

 

You will have

  • Previous experience as a sous chef or junior sous in a high quality restaurant

  • An excitement around seasonality of produce and preparing super-fresh food

  • Ability to manage and train a kitchen brigade

  • Experience of managing a staff rota

  • An understanding of budgeting food cost

  • An understanding of health and safety procedures.
